Yogurt marinades work faster than oil marinades, so if you are cooking fish you should only need to marinade for 20 minutes before cooking.

Chicken, pork or lamb will tolerate several hours in a marinade, but don’t leave chicken for more than 4 hours or beef for more than 6 hours as the meat will toughen as the acid from marinades actually cooks the protein.
