Bean & Pesto Mash

Serves 4 / prep 5 / cook 5


1 tbsp olive oil plus extra for drizzling

2 x 400g cans cannellini beans, rinsed & drained

2 tbsp. pesto


Heat the oil in a large saucepan. Add the beans & cook for 3-4 mins until heated through.

Lightly mash for a chunky texture, stir through pesto & season.

To serve, drizzle with a little oil. (optional)

Serve with meat and / or veg of your choice.
