SERVES 4
4oz lean steak mince
8oz quorn mince
5 cloves garlic finely chopped
1 large onion finely chopped
1 tsp. mixed herbs
1tbsp. Tomato puree
2 x 200g tins chopped tomatoes (pureed with blender if possible)
1 beef stock cube
8 sheets of pre-cooked lasagne sheets
4 tbsp. reduced fat cheese grated
2 fresh tomatoes sliced
Method
Dry fry mince, garlic & onion in a non stick pan
Add Quorn & mixed herbs. Cook for 1 minute
Add tomato puree, beef stock cube & tinned tomatoes, stir, bring to boil & simmer for 10 mins.
Place a layer of lasagne sheets in an oven proof dish, cover with 1/2 of the mixture
Cover with another layer of sheets and cover with the other 1/2 of the mixture
Cover dish with foil & cook for 30 minutes on gas mark 4 / 180
Place sliced tomatoes on top & sprinkle with cheese & cook for a further 10-15 mins.
Serve with a large green salad topped with a dollop of total 0%
Remaining portions can be frozen after being allowed to cool.
