This soup isn’t going to blow your tastebuds off in a great way but, it is very, very good for you.
Makes 14 portions, have 1 portion with each snack for first 7 days of your healthy eating plan, This soup is a highly concentrated, cleansing drink rich in minerals. It is designed to help improve the working s of your digestive system as quickly as possible.
3.5 litres water
4 carrots roughly chopped
1/2 head of celery roughly chopped
1 medium onion quartered
2 cloves of garlic crushed
2 bay leaves
4 sprigs fresh thyme (or 1 tsp. dried)
4 whole cloves
6 black pepper corns
6 sprigs of parsley
Large handful of fresh leaf spinach coarsely shredded
Juice of 1 lemon
1 teaspoon Dijon mustard
Freshly ground black pepper to taste
2 lemon & ginger teabags (optional)
Method
Put all of the ingredients, except the lemon juice, mustard, black pepper & teabags, in a large saucepan, bring to the boil & simmer gently for 30 minutes.
Strain the liquid into a jug & throw the vegetables away.
Return the broth to the pan & stir in the remaining ingredients.
If using the teabags, leave them in pan to brew for about a minute then lift out & discard.
Store the soup in the fridge for 7 days, having one cup twice a day for a week.
The teabags are optional but do add a freshness to the taste, & ginger is good for the digestive system.
