Coronation Chicken Kebabs
Prep time 10 mins / marinade time 20 mins / cook time 20 mins
Serves 4
2 x 150g skinless chicken breasts
16 seedless white grapes
1 tbsp mild curry powder
1 tsp finely chopped garlic
Salt & black pepper
2 tbsp very low fat mayonnaise
Salad & mango chutney to serve
Method:
Cut chicken in to chunks. Take 4 wooden or metal skewers and thread the chicken & grapes onto each.
Sprinkle the curry powder, garlic & seasoning on a baking tray. Roll the kebabs in the spice and leave to marinade for 20 mins.
Cook under a pre-heated hot grill or on a BBQ for 8-10 mins each side.
Drizzle the kebabs with mayonnaise and serve with mango chutney & salad.
