Gino’s Light Omelette with Chives & Potatoes
Per serving: 342 cal / 17g fat / 3.5g saturates / 3.3g sugars / 0.5g salt
3 large potatoes
3 tablespoons olive oil
Salt and freshly ground black pepper
1 onion, finely slices
3 tablespoons chopped chives
Preheat the oven to 170°C, 325°F, gas mark 3.
Peel the potatoes and finely slice. Lay out on a non-stick baking tray, drizzle with 1 tablespoon of the olive oil, season and bake for 15minutes.
Select a large ovenproof frying pan about 20cm diameter and 4cm deep. Heat the remaining oil in the pan, add the onions and cook over a medium heat for 5minutes, stirring occasionally. Remove the potatoes from the oven and layer with the onions in the frying pan.
Lightly beat the eggs with the chives and pour over the potatoes and onions. Season with salt and freshly ground black pepper. Transfer the pan to the oven and continue to cook for 30 minutes
Serve hot or at room temperature.
