Gino’s Roasted Tomatoes & soft Cheese rolled in Parma Ham

Serves 4

 

6 large plum tomatoes

Salt and freshly ground black pepper

2 tablespoons extra virgin olive oil

200g low-fat cream cheese

4 tablespoons finely chopped fresh chives

40g pitted kalamata olives, finely chopped

12 slices of Parma ham

4 tablespoons runny homey

8 slices of ciabatta

 

Preheat the grill.

 

Cut the tomatoes in half and place on a baking tray, skin-side down. Season with pepper, drizzle with the olive oil and grill for about 10minutes until softened. Set aside to cool

 

Mix the cream cheese with the chives and the olives in a medium bowl and season with the salt and pepper

 

Lay a slice of Parma ham lengthways on a chopping board and place a tomato half on one end. Drop a teaspoon of the cream cheese mixture on top of the tomato

 

Carefully roll up the ham to enclose the cheese and tomato. Repeat with the remaing ingredients to make 2 parcels.

 

Transfer the parcels to a serving plate, drizzle over the honey and serve with the sliced ciabatta.
