Grilled Salmon Marinated with Ginger, Honey & Lime

Serves 4

Prep time 10 mins / cook time 6 mins

*you can marinade this overnight if you want

2 tbsp olive oil

1 small red chilli, deseeded & finely chopped

1 garlic clove finely chopped

1 piece root ginger finely chopped

1 tbsp clear honey

Finely grated zest & juice of 1 lime

Salt & black pepper

4 salmon fillets


Make the marinade by whisking all the ingredients together in a shallow bowl & season to taste.

Put the salmon in the bowl & turn gently to coat with the marinade. Refrigerate for at least 20 mins or ideally overnight.

Heat the grill & cook the salmon for 3-4 mins on each side, spoon the remaining marinade over & allow to stand for 2 mins before serving.
