Serves 2 (prep time 5 mins / cook time 10 mins)
200g cooked chicken or turkey cut into strips
4 tbsp hoisin sauce
2 flour tortillas
1/4 cucumber, deseeded & shredded
4 spring onions, trimmed & finely shredded
Handful of watercress
Method
Heat the grill to high
Mix the chicken or turkey with half the hoisin sauce so that it’s coated, then spread out onto an oven proof dish & grill until sizzling.
Warm the tortillas under the grill
Spread the tortillas with the rest of the hoisin sauce then add the meat, cucumber, spring onion & water cress & wrap up.
Cut in half to serve with a fresh mixed salad for a great light lunch.
