Jamie’s Courgette Salad (you won’t think you’re gonna like it but you will – believe me!)

This salad is great served as a side dish with brown pasta & chicken or fish.
Serves 2
1 sprig of mint
Half a chilli
½ a lemon
60g light mozzarella balls
Either 1 large or 2 small courgettes
1 tbsp. Extra virgin olive oil
Method:
Put mint leaves and chilli on a chopping board, grate half of the lemon zest over the mint & chilli then chop it all until really fine.
Spoon it in to your serving dish, add the oil & squeeze in the juice from the lemon. Season with salt & pepper.
Use a veg peeler and peel the courgette into long ribbons over the top of the dressing.
Drain the tub of mozzarella and tip over the courgettes.
When ready to serve, mix together and enjoy!
