Jamie’s lovely butter beans & bacon
4 rashers of smoked bacon
1 x 400g tin of butter beans
Red wine vinegar
2-3 sprigs of basil, leaves picked.
Drizzle some oil into a frying pan over a low heat. Finely slice the bacon & add to the pan. Toss occasionally.
Turn the heat up once the bacon is golden, roughly chop the tomatoes and add to the bacon. Tip in the butter beans and their juices, and reduce heat to a simmer to gently cook the liquid down.
Once the liquid has reduced down to a sauce like consistency, add a drizzle of olive oil and a good splash of red wine vinegar & season with salt & pepper.
Sprinkle over the basil leaves & enjoy!
