Mexican Chicken Skewers

Serves 2

what you need:

2 chicken breasts

2 skewers

2 tbsp. honey

dried spices: chilli, hot paprika, cumin, oregano or you can use a few tablespoons of dried spices from a fajita seasoning packet.

salt & pepper

method:

if using wooden skewers, put them in the sink and cover with cold water to soak them (this stops them burning under the grill)

Put the grill on (medium to high)

In a bowl, mix a teaspoon of each spice (less chilli if you don’t want it too hot) and the salt & pepper.

In another bowl put the honey.

Cut each chicken breast in to 4  and add them to the bowl of spices, using your hands to mix and coat each piece well.

Place the pieces on the skewers and place under the grill. Grill for 5 minutes then turn once and grill for a further 5 minutes.

Remove the skewers and using a pastry brush dipped in the honey, brush the chicken to lightly coat in the honey.

Place back under the grill for 4 minutes, remove and brush again with honey and place back under the grill for around 4 minutes or until cooked through.

Serve with a rainbow salad & dressing.
