Mushrooms with poached Eggs & Ham

Great for breakfast or brunch

Serves 2

4 large, flat mushrooms, wiped & peeled

1 tbsp oil or spray lite

Salt & black pepper

4 small or medium free range eggs

25g low fat cheese grated

2 slices of thick cut ham

1slice of wholemeal or brown bread

method

Place the mushrooms on a baking tray & drizzle with oil or spray with fry lite. Season with salt & pepper to taste.

Place under a pre-heated grill for 5 mins, turning once half way through.

Meanwhile, poach the eggs in boiling water for 2-3 mins.

Place the mushrooms stalk side up on the baking tray, top each one with 1/2 a slice of ham & a poached egg. Sprinkle over the cheese & grill for 2 mins until golden.

Toast the bread & cut diagonally. Serve one triangle with each meal.
