VEGETARIAN MEAL THAT YOU CAN ADD A PORTION OF LEAN MEAT OR FISH TO
Serves 4 or can keep in the fridge for a day or two
1 tub low fat cottage cheese
3 eggs
Filling choice of salmon or ham or quorn slices
1 small Broccoli cut into spears
1 onion chopped
4 medium mushrooms chopped or 1 pepper chopped
Method
Beat the eggs, then add other ingredients.
Pour into an oven proof dish & bake for 40 mins at 180.
If you have too many ingredients & not enough egg mixture, add another egg white.
