prep time 5 mins / cook 20 mins
1 tbsp olive oil
2 x 150g cod fillets skin left on
Salt & black pepper
1 tomato sliced
100g reduced fat mature cheddar
2 tbsp white wine
Pre-heat oven to 180/gas 4
Heat oil in frying pan. Season the cod with salt & pepper & fry, skin side down for 2-3 mins until the skin is crisp
Turn the cod into an ovenproof dish & place in the oven for 5 minutes or until cooked through.
Slice the tomato & place the slices on top of the fish.
Grate the cheese & put in a small pan with the wine. Heat gently, stirring until melted & well combined.
Pour the cheese mixture over the tomatoes & fish, bake in the oven for a further 8-10 mins or until golden brown.
Serve with a mixed salad & baked sweet potato
