Roast Pepper & Feta stuffed Chicken
2 chicken breasts
I tbsp. Oil
1 portion of Feta & roast pepper pesto (see Get Saucy section)
Pre-heat oven to 190c/375f/gas mark 5
Make a slit along length of each chicken breast with a small, sharp knife & insert a finger in the slit to make a pocket in the breast
Stuff the breast with the pesto & place on a baking tray.
Drizzle the oil over the breasts 7 bake for 25 minutes or until the chicken is cooked.
Serve with a big green salad and 4 small boiled new potatoes.
