Roasted chicken & Mediterranean Veg

Serves 1

Heat 1 tbsp. oil in a roasting tray. Add ingredients and toss in the oil or brush with pastry brush.

Roast 1 chicken breast with 1/2 red pepper, 1/2 green pepper, 4 slices aubergine, 1 sliced courgette & 4 cherry tomatoes.

Alternatively, use a George Forman grill for a fat free version.


Serve on a bed of cracked wheat or a packet of flavoured steamed Tilda brown rice with a large salad and 5 small cubes of feta cheese and a drizzle of reduced fat salad dressing.
