Serves 4 (definitely not 2!)

This is a low fat, and easy to make dish and is great served with steamed veg & a little gravy.
1 tbsp sunflower oil
4 half fat or veggie sausages
50g plain flour
150ml skimmed milk
2 tsp wholegrain mustard
1 egg
1 apple, quartered, cored & sliced
Method
Heat oven to 240 / gas 9
Brush a 4-hole Yorkshire pudding tray with oil then place in the oven to heat
Brown the sausage all over in a pan over a high heat for 5 mins making sure they don’t burn
Remove from heat & cover to maintain heat
Tip the flour into a large bowl, season & make a well in the centre.
Whisk the milk, mustard & egg together, then pour a third of the mix into the well. Gradually draw the flour into the milk to form a paste, then whisk in the rest of the milk to make a smooth batter.
Cut the sausage in half with a pair of scissors.
Remove the pudding tray from the oven, add the sausage & apple to each mould then pour the batter over.
Bake for 20 mins until risen, crisp & golden.
Serve with carrot & swede mash or sweet potato mash & fresh steamed veg.
