Quick, easy to make & filling ALTERNATIVES TO WHITE PASTA & POTATO
Cook from frozen Salmon fillet or smoked haddock or chicken breast Onion, chopped
Asparagus (chopped very small)
Chilli (optional) fresh or powder
Salt & black pepper to taste
2 Tbl. Spoon olive oil
Parmesan cheese (from a tub)
Wrap your fish or chicken in foil & cook in oven as per package instruction.
Cook your rice in microwave following packet instructions.
Heat oil, fry onion & garlic & chilli over medium heat, once softened add asparagus & pepper. Cook for a few minutes then add frozen peas, cook until peppers & asparagus are softened enough to your taste.
Remove from pan and set aside in a bowl.
When your fish or chicken is cooked, remove from oven, heat oil in pan and brown fish or meat off for a few minutes. Either break it up in pan or remove and slice then return to pan.
Add the onions, peppers, asparagus & peas to the pan.
By now the rice should be cooked, so add the rice pan and over a low heat, stir to combine. Season with salt & pepper.
The oil from the onions mixture should coat the rice, if not, then add a drizzle more of oil and stir to mix it throughout.
Sprinkle with a little parmesan & enjoy.
This recipe uses frozen fish or chicken breasts, which are quick & convenient, it also uses frozen peas, and if you always have staples like onion, garlic & chilli in your cupboards then it leaves little to buy to make this filling dish.
