Vegetable Omelette

VEGETARIAN MEAL THAT YOU CAN ADD A PORTION OF LEAN MEAT OR FISH TO

Serves 2 (or can be eaten over 2 days as 2 snacks)

1 medium onion chopped

250g spinach after removing thick stems, rinsed & roughly chopped

2 medium tomatoes peeled & chopped

Good grating of nutmeg

100g canned chickpeas or flageolet beans

4 large eggs

Method

Soften the onion in a tablespoon of olive oil over a low heat in a saucepan.

Add the spinach, tomatoes & nutmeg & cook until most of the liquid has evaporated, then add the chickpeas or beans.

Lightly whisk the eggs & season with black pepper. Place a large frying pan over a low heat & add 1 tablespoon of olive oil. When the oil is hot pour in half of the egg mixture, immediately followed by the vegetables then the rest of the eggs.

Stir gently, cover with lid and cook over a low heat for 10 minutes or so until set.

Brown the top under the grill, & turn out on to a plate.
