Lentil Barley Burgers + Salsa

Ingredients:

Salsa:

  • ¼ cup of finely chopped pineapple
  • ¼ cup finely chopped mango
  • ¼ cup finely chopped tomato
  • 1 tablespoon fresh lime juice
  • 1 Serrano Chile (minced)

Burgers:

  • 1 ½ cups of water
  • ½ cup drained lentils
  • Cooking spray (one cal)
  • 1 cup chopped onion
  • ¼ cup grated carrot
  • 2 teaspoons minced garlic
  • 2 tablespoons of tomato paste
  • 1 ½ teaspoons ground cumin
  • ¾ teaspoon of salt
  • ¾ cup cooked pearl barley
  • ½ cup Panko (Japanese bread crumbs)
  • ¼ cup chopped parsley
  • ½ teaspoon ground pepper
  • 2 large egg whites
  • 1 large egg
  • 3 tablespoons olive oil

To Prepare:

 Salsa: Combine ingredients mix, cover and refrigerate. Yes as simple as that!

Burgers:

  1. Combine water + lentils in a saucepan, bring to the boil, cover + reduce heat. Simmer for 25 minutes until lentils are tender. Drain and place half of lentils in a large bowl and the rest in a food processor until smooth then add to the bowl of lentils.
  2. Heat a large non-stick skillet over medium heat and coat pan with cooking spray, add onion and carrot and sauté for 6 minutes (until tender) stirring occasionally, add garlic and stir non stop for 1 minute.
  3. Add onion mixture to lentils in the large bowl and add remaining ½ teaspoon of salt, barley and next 5 ingredients (through egg) Stir well, cover and refrigerate for 1 hour until firm.
  4. Divide mixture into 3 portions (should average into ½ inch thick) heat 1 ½ tablespoons of oil in a large non-stick skillet over medium-high heat. Add4 patties, cook for 3 mins each side or until brown. Repeat procedure with remaining 1-5 tablespoons of oil and 4 patties.

Serve with Salsa and Enjoy!
