Serves 6 (can be frozen) or you can half or third the recipe.
Carton of passatta (400-500g)
2 vegetable stock cubes
2 garlic cloves crushed
1 large onion chopped
1 chilli pepper finely chopped (optional to leave seeds in)
1 large red pepper chopped
Can of mixed beans in a chilli sauce
Can of butter beans
Can of canellini beans
Can of chickpeas
Empty passatta into a large pan, fill empty carton with eater and add to pan. Add stock cubes & bring to boil.
In a frying pan, gently fry onion, garlic & chilli. When softened, add pepper. Cook over low heat for 5 minutes then add to large pan with passatta.
Add all of the beans, add sprinkle of salt, big pinch of black pepper and bring pan to boil, then simmer until soup is thickened slightly & flavours have infused.
At this point I allow to cool and then divide into single portions & pour into freezer bags to freeze.
