Sausage & pepper casserole

Serves 2

4 sausages (as above)

3 peppers (mixed colours) seeded & sliced

1 red onion sliced into long strips

2 tbsp tomato puree

1 x 400g tin chopped tomatoes

Salt & pepper to taste

Serve with small baked sweet potato each or 3 small new potatoes each & green salad.

Method

Pre-heat oven to 190 / 375f / gas 5

Place peppers & onion in a shallow casserole, stir in tomato puree & chopped tomatoes & season

well.

Place sausages on top & bake for around an hour, turn sausages and cook for another 30 mins.

or until sausages are cooked.

Storage: left over s can be stored chilled for up to 3 days.
