PLEASE TRY THIS IT’S VERY, VERY TASTY! AND ONLY TAKES MINUTES TO MAKE!
1 X 400g tin of black beans
1/2 tsp. ground cumin
1/2 tsp dried oregano
1 tsp. dried chilli flakes
1/2 a large onion or 2 spring onions chopped
1 red pepper chopped
60g low fat cheddar cheese ( or 30g low fat cheddar and 30g Mexican fiery cheddar if you’ve been good and if you like it spicy!)
Salt & black pepper
4 wholemeal tortillas
1 clove garlic
In a bowl, mix together black beans, cumin, oregano, chilli flakes, onion, pepper & grated cheese. Season to taste then get your hands in and sqeeze the mixture a few times, squashing the beans and allowing the flavours to infuse.
Lay the tortillas out and rub the cut end of the garlic clove vigorously over the surface of the tortillas.
Spread the mixture over 2 of the tortillas and place the other two on top to form a sandwich. Make sure the garlic rubbed sides are facing in over. Press the mixture down inside.
Heat 1 tbsp. oil in pan (or spray with fry light) and lightly fry the tortilla, pressing down occasionally, until golden brown. Repeat with the other tortilla.
Cut each one into 4 quarters and serve with a fresh green salad and a dollop of total 0% greek yogurt.
