Strawberry Creme Brulee

serves 4

200g chopped strawberries

200ml low fat greek yogurt

200ml low fat custard

1 vanilla pod or 1 tsp vanilla extract

4 heaped tsp. caster sugar


Divide strawberries between 4 ramekins.

Put the yogurt & custard into a small ball and scrape the seeds from the vanilla pod into it (or add the extract) then stir.

Pour the mixture over the fruit in eack ramekin then sprinkle the sugar over the top.

Get the grill nice and hot and put the ramekins under it and cook until the sugar turns a dark caramel brown colour (keep an eye on it as sugar can burn easily)

Put into the fridge for a couple of hours before serving.

Note: I’ve put this recipe in the quick meal ideas section because it is so quick to make – but you do have to wait a few hours before you can eat them – but that wait makes them taste even more delicious!
