WHEAT FREE: Roast salmon with a herby oatmeal crust

Serves 4

Prep time 10 mins / cook 10 mins

4 salmon fillets

2 tbsp coconut oil plus extra to brush

85g oatmeal

Zest of 1 large lemon

3 tbsp freshly chopped herbs (parsley, mint & chervil)

Salt & black pepper

Method

Pre-heat oven to 220/gas 7

Brush the salmon all over with oil

Combine all remaining ingredients season & place on a plate. Dip the rounded surface of each fillet into the mixture then place on an oiled baking tray.

Place on top shelf of oven for 10 mins or until fish is cooked.
