GLUTEN FREE: Blueberry Crisp

prep time 10 mins – cook time 20 mins

what you need:

200g fresh blueberries

1 tbsp. maple syrup

1 tbsp. gluten free flour

1 tbsp. demerara sugar

1 tbsp. polenta flour

1 tbsp. gluten free low fat spread

Method:

pre heat oven to 200c

place blueberries in an oven proof dish

mix together the flour, sugar & polenta in a bowl, then using your fingers, rub in the spread until breadcrumb consistency.

sprinkle the crumbs over the fruit & bake in a preheated oven for 20 mins. until crisp.

serve warm or cold with low fat yogurt.
